By exploiting the violent, instantaneous decompression of the inert processing gas (normally carbon dioxide or alternatively nitrogen), the machine allows a massive extraction of the colouring, olfactory and structural substances, guaranteeing in the final analysis a marked improvement in the organoleptic properties of the wine, which appears with more volume, body and smoothness.
Control can be exerted over each phase either manually or automatically from the ideally placed control panel.
