Especially suitable for a rapid and pertinent extraction of the colouring, olfactory and structural substances, with a clear increase in the organoleptic properties of the wine.


The cold pre-fermentation continuous Extract System ES 30 is distinguished by its constructional features and an extremely special operating process, characteristics which translate into decidedly superior results in terms of quality.

By exploiting the violent, instantaneous decompression of the inert processing gas (normally carbon dioxide or alternatively nitrogen), the machine allows a massive extraction of the colouring, olfactory and structural substances, guaranteeing in the final analysis a marked improvement in the organoleptic properties of the wine, which appears with more volume, body and smoothness.

Control can be exerted over each phase either manually or automatically from the ideally placed control panel.
